Almond Butter Cookies

Almond Butter Cookies
  • 100g Ancient Bakes Teff Flour
  • ½ teaspoon sea salt
  • ¼ teaspoon ground cinnamon
  • 2 tablespoons unsalted almond butter
  • ½ cup maple syrup
  • 2 tablespoons melted coconut oil
  • ¼ teaspoon pure almond extract
  • 1 teaspoon pure vanilla extract
  • Sea salt for sprinkling

Cooking Instructions:

  1. Preheat oven to 180c. Line a baking tray with parchment paper.
  2. In a large bowl, combine Ancient Bakes Teff Flour with the salt, and cinnamon.
  3. Next add almond butter, maple syrup, cooled coconut oil and the almond and vanilla extracts. Well mix with a spoon.
  4. Roll the cookie dough into small balls and place on the baking tray. Use a fork to flatten balls about halfway down. Sprinkle dough with sea salt.
  5. Bake for 10 minutes and allow to cool down for 5 minutes on the tray. Carefully transfer to a wire rack.
