Freekeh Loaf

Makes 2 loaves

  • 120g Ancient Bakes Freekeh flour
  • 300g bread flour
  • 7 gr dry yeast
  • 1/2 tsp ground allspice
  • 300ml water
  • 1 tsp salt

Cooking Instructions:

  1. In a large bowl, mix Ancient Bakes Freekeh flour and bread flour with yeast. Stir to blend then add ground allspice.
  2. Add water a bit at time and mix in with hands. Knead the dough for a few minutes before adding salt. Kneed well.
  3. Transfer the dough into a clean, lightly oiled bowl. Cover and proof for an hour and a half.
  4. Kneed the dough gently then return to bowl, cover and refrigerate overnight.
  5. In the morning, take the dough from the bowl and divide in half, shaping each half into an oval.
  6. Preheat the oven to 200°C and line a baking tray with parchment. Place the two loaves on the tray and bake for 30-40 minutes. For the last ten minutes, lower the heat to 180°C and bake until the crust is golden.
  7. Enjoy while still warm with butter and jam!
